1 Piece Safeway Tuna Steak
1 cup sushi rice – soaked
100 ml rice wine vinegar
Half Cucumber
1 shallot
8 cherry tomatoes
1 green onion
100 ml Japanese mayo
1 tbsp sriracha sauce
1 teaspoon sesame seeds
1 sheet Roasted Nori
2 tbsp soy sauce
1 lime – juiced
100 ml edemame
1 mango chopped
50 ml pickled ginger + juice


1. Cook rice as per manufacturers directions
2. Once cooked, add rice wine and cool
3. cut tuna once half thawed and mix with soy sauce, pickled ginger and juice, sriracha, green onions, (reserve some for garnish)
4. Cut cucumbers as you wish
5. Cut Carrot in strips
6. Half tomatoes
7. chop mangoes to serve
8. Add rice to bowl. Top with tuna and garnish with cucumber, carrot, tomato, edemame, mangoes,
9. Garnish with sesame seeds and nori
