BC Chicken, Orzo, and Kale Soup

Try this soup out to celebrate the fall approaching.

1/2 Cup Diced Yellow Onion
1/2 Cup Diced Celery Stalks
1 fl oz canola oil
2 sprigs Fresh Thyme
1 Leaf Bay Leaf
2 L Chicken Stock
4 Leaves Fresh Kale
1 Cup Orzo Pasta
1 (with breasts removed) Meat from cooked rotisserie chicken
1 Tbsp salt and pepper


1. Sautee the diced onion and celery in a large pot (big enough to hold 3 L) on medium heat.
2. Once browned (about 3-4 minutes) add the thyme and bay
3. Let cook another 30 seconds and add in the chicken stock and bring to a boil
4. Add the Orzo and cook 6-8 minutes until orzo is soft like aldente pasta
5. Add the Kale and chicken and heat through. Add salt starting at 1/2 Tbsp and keep tasting until it is right.
6. Serve in 4 bowls maybe even adding some of your favorite warm bread.
