Corn Masala

Enjoy this easy to make, flavourful corn masala dish with your friends.

Ingredients

4 tins Corn niblets (341 ml or 12 oz)
1 cup Crushed tomatoes
2 tbsp Oil (canola or any vegetable oil)
1 tbsp Cumin seeds
1/4 stick Ceylon cinnamon (or any cinnamon)
1 tsp Garlic paste or chopped garlic
1/2 tsp Turmeric Powder
1 and 1/2 tsp Salt
4 tsp Cumin and coriander powder
1 tbsp Lemon juice
7-8 Curry leaves (only if available)
8-10 Cilantro chopped for garnish
3-4 tsp Chilli Garlic sauce (depends on spice level)

Instructions

1. Heat oil in a pan, medium heat
2. Saute Cumin seeds, after a few minutes add
3. Currey leaves and Garlic, stir often
4. Add cinnamon, saute some more
5. Add corn (drained of any water)
6. Stir and let it heat up
7. Once hot, add crushed tomatoes
8. Stir and let it heat up
9. Once simmering, add all the powder spices
10. Stir till all evenly spread and cook for another
11. Minute & add the chili garlic paste
12. Add lemon juice
13. Switch off stove and transfer to serving dish
14. Garnish with cilantro
