Mahi Mahi Tartare

1 Lbs mahi mahi tuna
1 Tbsp soy sauce
1 Tbsp sesame oil
1 pinch salt
1 cup corn
2 pc peach
0.25 red onion
0.25 bunch of cilantro
1 jalapeno
1 lime
1 avocado
1 bag tortilla chips


1. dice tuna into 1 cm cubes
2. mix the tuna with sesame oil, soy sauce and salt
3. wrap tuna and keep in fridge for later
4. roast corn kernels until they start to turn black then cool them down
5. while the corn roasts and cools down dice the peaches into 1 cm cubes
6. dice the red onion and jalapeno as fine as you possibly can aim for 3 mm
7. roughly chop cilantro leaving a bit of the stems (they have the most flavour)
8. mix the cooled corn, peaches, onion, jalapeno and cilantro in a bowl
9. add the zest and juice of the lime and season with salt
10. using a ring mold add 4 oz of the tuna mixture to the bottom of the mold
11. use the plunger of the mold to flaten the tuna
12. add two or three spoon full of the salsa to the top of the tuna and use the plunger to push it down again
13. gently remove the the mold to reveal your masterpiece
14. top the salsa with 1/4 of an avocado fanned on top
15. pile tortilla chips beside the tartare or around it be creative
